The author of this honey book Friedrich Theodor Otto was head of the state-approved teaching and research institute for beekeeping in Bad Segeberg. He describes in the book the extraction, treatment and evaluation of honey in word and picture. Illustrated with 32 b/w illustrations. According to the extraction of the honey one differentiates between different sorts. Honey is extracted from the honeycomb in a special centrifuge, a so-called "honey extractor", at ambient temperature. More important for the preservation of the ingredients in honey is, among other things, the cool storage. If possible, honey should not be heated above 40 °C in order to preserve its ingredients. A special feature is the extraction of heather honey because of its jelly-like consistency. Traditionally, in the heathland beekeeping, this is pressed. To do this, cut out, unhatched honeycomb pieces are cut into ripped honeycombs.
