Why is the DE version more expensive than the FR version? Is it correct that if I take the FR version simply the cover is in FR but the game can be played in German?

It doesn't matter which version you buy. The language is determined based on your setting on the Nintendo Switch. The only thing in French is the physical packaging of the game.
