Is it possible to override or manually set the MAC address of the WAN XGS-PON on the bridge?
Yes it is possible. You can either leave the zyxel MAC, specify the MAC, or have it mirror/passthrough the MAC from the device connected on the LAN side.
In my configuration, I have a new router cloning the MAC from the previous SWISSCOM router, and the zyxel is configured to mirror that MAC
No, but it shouldn't be necessary.
I have the bridge in use (Swisscom as ISP) and it also works with a new MAC address if the VLAN and DHCP settings are correct. Simply set the PON of the bridge to "bridge mode" (was my default) and you should get a MAC address on the back of the router. With Swisscom, simply configure Swisscom DNS on a client and as soon as it wants to connect to the Internet, the login prompt appears and the connection can be registered from there.
