Sunrise does XGS-PON on 10 Gbit/s......that could be the problem here - apart from the CAT5e. The transceivers only work with the older connections that run on GPON.
Ethernet copper cables Cat. 5e support up to the frequency range of 100 MHz and achieve a throughput of up to 1 gigabit per second ("Gigabit Ethernet"). - However, your Sunrise Gigabox (fibre 10Gbit/s) delivers ten times that.
What you need is not a Cat. 5e, but a Cat. 6a Ethernet copper cable. The TP-Link MC 220L with one 1 Gigabit/s fibre and one 1 Gigabit/s copper cable connection is also ten times too slow.
