Question about Fiber7 Hardwarebundle
Does the set work for all EWZ fibre-optic subscriptions? I would like to use it to replace the EWZ standard converter.

I used to have Züri.net (with Init7 as provider). Now I was finally able to switch to Finer7. With Züri.net you need an ONT, a relatively large device, to connect from fibre to copper/Ethernet. This set only fits Fiber7.
I can't say. züri.net would probably know whether all providers on their network are compatible with which hardware.
