Could this sensor be used to give a command to a wifi socket so that it switches on as soon as the humidity is too high?

Yes, this is possible with the automation functions, you just have to make sure that the sensor and the WLAN socket can see each other in the same home automation system where you want to set up the automation. For these sensors, however, you absolutely need a bridge, because the sensors are managed by the bridge and not via WLAN.
