Yes you can attach this camera to the 200-600 mm lens like any other E-mount camera. However, the camera is almost six years old. The AF is not the fastest. So if you want to photograph animals in motion, sports or flying birds, this is the wrong camera. Then the successor Alpha 7 III would be more suitable.
And now? However, the T. company cannot deliver immediately. I wouldn't recommend the old A7II anyway. The sensor is from 2012 and comes from the Alpha 99. There are better ones now. The autofocus is also not the fastest.
Suitable is perhaps the wrong word. There's a reason why there are still real camcorders (and GoPro?) alongside still cameras. But yes, you can film videos with it. How well does it work? Best read one of the many reviews here or on the internet/Google/Youtube. While I'm sure the focus is mostly on snapping photos.
This must always be observed when using a lens that does not correspond to the focal length of the camera/sensor.

Yep... Sony does a good job and the camera is a super all-rounder... but....
The question is whether you need full frame... I mean the Fujifilm X-T2 has a very good ISO performance itself... a much better autofocus than the Sony and the images are so good in JPEG that you don't have to do much to them. Add to that the film effects Fuji has... they are awesome... say what you will about the integrated effects... Fuji's are GENIAL!
On top of that, the lenses are not necessarily cheap with Sony.
I myself have the A7RII and only have the 55mm and 90mm. If I didn't have these... I would probably have ended up with Fuji.
I don't see any big advantages of going full-frame anymore.
I own the Sony A7III and am very satisfied, but there are some points that speak for the Canon models.
1. the viewfinders on the Canon cameras are optical, so they have no delay. (Spotting advantage).
2. the DualPixel autofocus of the Canon cameras is the fastest AF system. (Spotting advantage)

4. compare the prices of the lenses depending on your budget (full frame is more expensive and Sony telephoto lenses are very good but start at 1000+ francs).
5. SLR cameras have a longer battery life and the display on Canon cameras can be rotated and tilted. (Advantage for landscape photography)
6. Canon cameras can take more pictures per second in continuous shooting mode (advantage for planespotting).
7. Sony is more compact and lighter.
Conclusion: The 6D Mark II is the most suitable, but also has its price. For smaller budgets rather the 80D. The Sony has fewer advantages than the Canon models in this area of application.

I recommend that you start a discussion instead of asking such a question specifically about a camera, as it is very likely that someone who owns the A7s does not know the A7 II and/or vice versa... Better is usually relative and you mention a lot of subject areas that you want to cover with a camera and very often it depends on the right lens.
