I have the Snapdragon version and have not had any limitations so far.
The Snapdragon is (was) simply the more powerful processor. This was particularly noticeable with the predecessor S20 Ultra. The phone could never exploit its full potential with the Exynos. The battery life was worse, the device got hotter, the camera was noticeably worse, etc.
Samsung has now fixed these inconsistencies pretty well with the new Exynos. You could probably also enjoy the device today with the Exynos. I simply opted for the Snapdragon to be on the safe side, as I don't want another phone like the S20 Ultra.
