Yes it is possible to stream content from your Plex Media Server to the Shield. I already use it this way ;) The box is one of the best Plex clients I have used in recent years.

I have also installed your desired app Zattoo, Netflix, Kodi and NordVPN. I also use the usual suspects:
YT, Disney+, AmazonePrime, the media libraries of the German and Austrian channels (thanks to VPN) and co.
What stands out most negatively is the synchronisation between sound and picture when streaming and zapping for longer periods of time. If the deviations become too great, a brief switch on/off of the Shield helps and the synchronisation is correct again.
My conclusion of the last three years is actually positive and I currently have no reason to complain.
Yes, you can pair your B&O Beoplay HX headphones with the device via Bluetooth to receive the sound while watching TV. To do this, you must set the headphones to pairing mode and select the headphones in the device under "Settings" -> "Remote control and accessories" -> "Add Bluetooth accessories". Please note that latency may occur depending on the Bluetooth codecs used.
the remote control can do both, whereby infrared is used to control external devices such as TVs, Sonos etc.

The Blue TV application can be installed on the Shield TV Pro if it is available from the Google Play Store, which is integrated into the Android TV operating system used by the Shield TV Pro.
