The KaiOS operating system is not that great.
How good is the battery? I have no idea. It lasts 3 days on standby.

I may not directly answer to the question, but share my experience. I bought the phone, concluded that I could make it work, but realized that sooner or later it would stop working as OS seems not to be supported anymore. It sits in the drawer now. Ah, no way to jailbreak it if this is in your mind.

Questions about the product: I bought this thing a long time ago. Never used it. Sold it again via tutti. My memory may be deceiving me.
2) No. As far as I know, the battery is not user-replaceable. I have no idea about the availability of spare parts.

Yes of course: To turn off Google Assistant, tap Settings > Google > Search, Assistant & Voice > Google Assistant. At the top of the screen, tap Assistant, select your device and turn off Google Assistant.
Unfortunately, I could not find any information about this on the manufacturer's website, in forums or in the user manual.

No, there is no SBB app (no Fairtiq either).
The selection of apps is small but sufficient, the main function of a dumbphone is to be dumb.
Important (non-standard) apps that are available are: WhatsApp (with voicemail), Facebook, Youtube (watching videos works tip top but you don't want to waste the whole evening on YT), Twitter, Google Maps (with route, very good!), Google Assistant (is bad), Internet sharing, Email, Weather, QR code scanner.
