I think it's a bit too big, also because of the case. And you have to see if it fits over the ram. I only have 2 ram sticks in it and can't fit any more because the cooler covers the slots

No, it won't fit. The case supports a CPU cooler length up to 160 mm. The NH-D15 has a length/height of 165 mm with installed fans.
Use "MSI Afterburner" to make the fans of the GPU rotate faster so that the GPU is cooler.

G.Skill Ripjaws V RAM is 42mm tall, so you will need to move the second fan 10mm higher, making the overall cooler height 175mm. Check the specifications of your case to see if this still fits.

I also have the G.Skill Trident Z and no problem with it, there is still room. If the second fan is above the RAM, it will be a bit higher. If you want to have the GPU in the first PCI-e slot, that will be tight. I think that's possible, but only if the GPU doesn't have a "thick" backplate.
I am not sure what the "NM-" is. What I can say is that this cooler came with everything needed to mount it on an AM4 socket. I use this cooler on this board: ASUS Rog Strix X570-E Gaming (AM4, AMD X570, ATX)

For 550W (!!) I would consider a different method. I would consider a liquid cooling block (not CPU cooler but for power electronics). But basically it is possible as long as you have a contact surface.
