Good day. You can only clamp a mobile phone in the tripod and only in landscape format. An iPad is too big and would also be too heavy.

I don't have an iPhone 11 Pro Max. But the largest suitable width of a smartphone in the Joby One GP is about 9 cm.

Handles can be pulled apart up to 90mm (width of the mobile phone), so should fit many models.
