There are many tutorial videos (all working) about this on YouTube.
For my part I first transferred all my applications from my old phone with Clone Phone.
Afterwards I use Petal Search for the update.
For the applications that don't run because of GMS (which are very few) I use a web browser.
It could look like a complex, but it's not, personally I find it very playful as it reminds me of Androide in its early days.

Google Play Store is not installed on the Huawei P40. You may be able to side-load this application using internet tutorials, but I highly doubt that critical banking applications should be run on a system that does not offer Google Play Store functionality. I would recommend you consider buying the Poco F3 5G phone, it closes less than half the size of the P40, has all the Google Play Store functionality out of the box.
The Poco F3 also has G5, the same RAM and storage and the AMOLED screen has 120 Hz. CHF 399 at Digitec.
