I can't say for sure... I don't know this Paulmann controller. ZigBee is generally relatively well standardised, so the chances are good that you can control your device with Homee via a "similar" ZigBee implementation if not specifically available. The hardware itself (ZigBee bridge cube) should be compatible. However, to clarify the functionality with certainty, I recommend the Homee forum at https://community.hom.ee/

FYI: You don't necessarily need the one from Homee... can be a standard "MicroUSB-to-Ethernet adapter" (with MicroUSB power input)... I, for example, use the "Amazon Chromecast" adapter - works perfectly because it has the same standard chipset and is available at a slightly lower price. But I haven't looked here on Galaxus/Digitec to see if there are any alternatives.
On the homee page it says that it needs the Hörmann BiSecur Cube to do this

Yes, that is possible. But you have to make the Smart button first.
If you pair Homee with Homekit, you can control the Homee products (I have Zwave, enocean and Zigbee) in Apple Homekit. But "only" Homekit products are not transferred to Homee. You can ask specific questions in the Homee forum, the response time of the users is extremely fast.
Homee has a cigbee cube. I couple all Hue luminaires with it. The compatible products are listed on the homepage.
The Brain is needed in any case. It supplies power, network and control. A V2 of the Z-Wave Cube has also been "announced" for some time, although it is not clear when this will actually be released.
