Did it get its name from the hills where it grows in India, which run along the coast of Malankara? That's not certain. In any case, cardamom, which originally comes from this region, is also cultivated in Cambodia and Sri Lanka, and for several decades now in Guatemala. This spice was already used in ancient Greece and Rome, where it was valued for its digestive properties and its ability to freshen breath. Cardamom is grown for its fruits, which contain dark brown seeds with a warm, camphor-like flavor. After the plant's flowering period, the capsules are harvested by hand, with each containing about twenty aromatic seeds.
