I lived more than a couple of decades in Naples and I can tell you, pizza coming out from this oven are just like the one in Naples... if you do the right dough.
Same smell, same flavor.
And yes, time matters. Temperature in pizza ovens are 400-450, just like this one.
50s for a Focaccia, 90s for a Margherita.
As someone else already said, turn each 20 secs.
And enjoy a real napolitan pizza!
