At the mill, we make sure that there is no mixing with raw materials containing gluten. Each batch is analysed in the gluten-free laboratory to ensure the controlled gluten-free quality. Black bread contains over 40% seeds; many sunflower seeds combined with crushed and whole linseed. Instead of rye sourdough, which is not gluten-free, we use buckwheat sourdough for the typical black bread taste. The black bread is a yeast bread and works well in bread baking machines. It can also be prepared in the baking tin. With the brown bread baking mixture, variants such as muesli sticks and finn bread are also successful.
