With the knives of the MIYABI 5000MCD series, ambitious hobby and professional chefs have precision tools at hand that are perfect in function and ergonomics and absolutely unique in design.

The fine Santoku knife from the Miyabi 5000MCD series stands for the finest Japanese craftsmanship and is based on the tradition of Far Eastern aesthetics. The fine damask structure is reminiscent of the swords from Japanese stories - and rightly so, because this specimen is also extremely sharp. 100 layers of steel surround a core of MC63 microcarbide powder steel, the blade has been hardened in the specially developed Cryodur, which makes it extremely robust.

The Santoku knife is an aesthetic masterpiece, manufactured using the most modern materials and traditional processes in perfect symbiosis. The classic Japanese Honbazuke trigger makes the knife edge particularly sharp. Even in the 21st century, this comparatively complex process - consisting of several grinding passes - is still carried out manually in order to obtain an authentic result.

From the blade to the handle, the Santoku knife is unique: the natural structure of the Masur birch used in the knife handle gives the knife its unique appearance. Thanks to the traditional D-shape, the sanded wood sits comfortably in the hand and thus ensures precise and fatigue-free cutting. The design is completed by stylish details such as a pin with a Japanese mosaic. The straightforward appearance of the knife underlines its functionality: With the Miyabi Santoku knife, even more complicated work with fish, meat and vegetables is easier to handle.

Eine Investition für's Leben

Das Design überzeugt (wenn's einem gefällt). Die Einzigartigkeit durch die Birken-Griffe ist toll und die Qualität, Verarbeitung und Schärfe macht wirklich Spass. Das Messer ist für das Schneiden von Gemüse und Früchten perfekt geeignet. Die Messer sind nicht gerade günstig, aber dafür ist es wohl eine Investition für's Leben, wenn man sie richtig pflegt. Die Messer werden in einem hochwertigen Kunststoff Etui geliefert, jedoch wäre es schade, diese nicht an einem tollen Messerblock in der Küche zu präsentieren. Vermutlich ist der Griff nicht das Ultimative in Sachen Handling, aber bisher konnte ich keine Ermüdungen beim Schneiden feststellen.more
