Description

Aesthetics have always played a central role in Japanese cuisine. The appearance of a dish, its arrangement on the plate: this is just as much a part of the pleasure as its taste and aroma are. In the kitchen, Japanese chefs place equally high demands on aesthetics and functionality. With the MIYABI 5000MCD series of knives, ambitious amateur and professional chefs have precision tools at hand that are perfect in function and ergonomics and absolutely unique in design. The fine Santoku knife from the Miyabi 5000MCD series stands for the finest Japanese craftsmanship and is based on the tradition of Far Eastern aesthetics. The fine damask structure is reminiscent of the swords from Japanese stories - rightly so, because this specimen is also extremely sharp. 100 layers of steel surround a core of MC63 MicroCarbide powder steel. The blade is hardened in the specially developed Cryodur, which makes it extremely robust. The Santoku knife is an aesthetic masterpiece, in the production of which the most modern materials and traditional processes experience a perfect symbiosis. The classic Japanese Honbazuke trigger makes the knife edge particularly sharp. Even in the 21st century, this comparatively complex process - consisting of several grinding passes - is still carried out by hand in order to obtain an authentic result. From the blade to the handle, the Santoku knife is unique: The natural structure of the Masur birch used in the knife handle gives the knife its unique appearance. The sanded wood lies well in the hand thanks to the traditional D-shape and thus guarantees precise and fatigue-free cutting. The design is completed by stylish details such as a pin with a Japanese mosaic. The straight-line appearance of the knife underlines its functionality: with the Santoku knife from Miyabi, even more complicated work with fish, meat and vegetables is easier.more

Kitchen knives

Kitchen knives are used for various purposes and come in countless shapes, sizes and colours. The most important purchase in terms of knives is the all-purpose knife – it tackles most jobs in the kitchen. Choose between a classic European model featuring a relatively long blade and a well-balanced handle or go for an Asian Santoku knife that’s great for getting to work on vegetables, meat and fish. Smaller tasks, like cleaning, peeling and cutting fruit and veg, are best tackled with a pairing knife. Alternatively, there are also special types of knives for bread, cheese, butter, herbs or ham as well as for filleting or for carving. Knife sets are not only a great way of saving money but they also guarantee perfectly matched knives for the respective tasks. The three most important materials kitchen knives are made of are Damascus steel, ceramic or stainless steel. Knives made from Damascus steel originate in traditional sword forging. Because of their multiple layers, Damascus steel knives are also appealing to the eye. They are corrosion resistant, extremely hard and durably sharp. Ceramic knives are characterised by exceptional hardness and sharpness. They do not transfer odour, do not rust and lie comfortably in the hand. Their blades are flexible, thereby reducing risk of breakage. Stainless steel knives with plastic handles, on the other hand, are great value for money. Their robust materials are dishwasher-safe yet durable. So knives not only vary in terms of the materials they are made of but also feature blades that are fundamentally different. They can be smooth or serrated or may feature indentations on both sides to prevent whatever they are cutting from sticking.

Wood

Wood is generally used to describe the solid or hard tissue of the stems (trunk, branches and twigs) of trees and shrubs. Botanically, wood is defined as the secondary xylem of seed plants produced by cambium. According to this definition, however, the woody tissues of palm trees and other higher plants are not wood in the narrower sense. However, the storage of lignin in the cell wall is also characteristic here. In a broader definition, wood is therefore also understood as lignified plant tissue. From a cultural-historical point of view, woody plants are probably among the oldest used plants. As a versatile, but especially renewable raw material, wood remains one of the most important plant products to this day.

Damasteel

Damascus steel was a term used by several Western cultures from the Medieval period onward to describe a type of steel used in swordmaking from about 300 BC to 1700 AD. These swords are characterized by distinctive patterns of banding and mottling reminiscent of flowing water. Such blades were reputed to be not only tough and resistant to shattering, but capable of being honed to a sharp and resilient edge.

5000MCD Santoku (18cm)
