The iMarku Santoku is forged at a high temperature, then hardened at a low temperature and sharpened by hand by the craftsman to 15-18° to create the perfect Santoku knife. It is extremely sharp for cutting meat, fish, vegetables, fruit, and sushi, thanks to its design and weight control. Additionally, it is rustproof and corrosion resistant. The unique groove design creates a gap between the blade and the material to prevent food from sticking to the blade.
