According to my informations, there is a M.2 SSD and a 2.5" HDD installed. You may chose any appropriate parts to upgrade it. SSD needs to be in M.2 2280 Format. The HDD needs to be in 2.5" Format. I don't really see a point upgrading RAM. But if you chose to upgrade it, you would need DDR4-RAM, 2'400 MHz, SO-DIMM 260 Pins, Non-ECC.

Examples for upgrade:
WD Black (512GB, M.2 2280)
Seagate BarraCuda (2TB, 2.5", Notebook)
Kingston ValueRAM (1x, 16GB, DDR4-2400, SO-DIMM 260 pin)

so am I right in thinking all my files and music etc will be stored on the ITB HDD and application data such as the windows 10 pro it comes with and any apps I install will go on the SSD

Yes, that is correct. Although installing any app usually let's you chose the path where you'd like to install it. Documents, pictures, videos and other files i suggest to save on the HDD.
