A nice smell and a delicious taste: That’s fondue

As the days get colder and shorter, we enjoy coming together to spend time in the warmth of our homes. And we think of our favourite winter dishes. What’s more suitable for this time of the year than a cheese fondue! Do you know what to look for in a fondue pot? What about finding the right cheese mixture? Here are some important things to know about fondue.

Which pot (caquelon) would you like?

Most caquelons are made of cast iron, stoneware, ceramic or china. What’s important is that the base of the pot has a certain thickness that makes sure the heat is transported slowly to the cheese. That’s what’s needed to melt the cheese without it burning. For this reason, cast iron caquelons are ideal. If you’re using a stoneware caquelon, keep a close eye on your cheese and stir regularly.

Making sure you get the cheese mixture right

Fondue isn’t a simple dish; in fact, there are many different cheese mixtures and no fondue tastes like another. If you’re buying it in a cheese shop, you’ll be asked which kind of mixture you’d like and if you’re in a food store, there will be different ready-made mixtures. This can be confusing, so it’s well worth knowing what you like. Finding out which types of cheese you like will help you find your favourite fondue mixture. The most popular mixtures in Switzeland are made of the following cheese types:

Fondue moitié-moitié: half Greyerzer and half Vacherin fribourgeois
Fondue fribourgeoise: 100 % Vacherin fribourgeois
Appenzeller Fondue: 100 % Appenzeller
Fondue neuchâteloise: half Greyerzer and half Emmentaler
Innerschweizer Fondue: a third of each Greyerzer, Emmentaler and Sbrinz
Walliser Fondue: 50 % Vacherin, 25 % Greyerzer, 25 % Raclette cheese
Ostschweizer Fondue: a third of each Greyerzer, Appenzeller and Tilsiter

The liquid you add to the mixture will also affect the taste. Usually, fondue is made with white wine, but fondue with Champagner or alcohol-free versions with apple cider or stock also exist.

What to drink with fondue

The traditional drinks to go with fondue are Kirsch (a clear fruit brandy made of cherries) in a shot glass or dry white wine. It’s often said that liquor makes sure the cheese isn’t too heavy on the stomach, but that’s not true. Alcohol slows down the stomach. Cold drinks won’t make you feel better either; the ideal drink to go with fondue is green tea. But let’s be honest: White wine will stay our favourite drink with fondue.
